Elk Cove Inn & Spa's Morning Pie

ingredients
2 cups cottage cheese
3 eggs
2/3 cup sugar
2 tablespoons flour
1/3 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons grated orange rind
1 tablespoon orange juice
1/4 teaspoon orange extract
directions
Preheat oven to 350 degrees F.
Beat cottage cheese with an electric mixer for 1 minute. Add remaining ingredients. Blend well. Pour into a greased pie plate and bake for 50 minutes or until a knife inserted comes out clean.
Refrigerate overnight. Serve chilled with a fresh fruit garnish. Freezes great.

Had this at the Elk Cove Inn and have made it at home. Have served at a parties and it is a hit!
