Ingredients:
1 (8 ounce) package cream cheese -- softened
1 (14 ounce) can sweetened condensed milk
1 tablespoon grated lime rind
1/2 cup fresh lime juice
1/3 cup light rum
1 graham cracker pie crust, 9 inch
1 tablespoon light rum
1 cup whipping cream
1 teaspoon grated lime rind
Directions:
Beat cream cheese until smooth and fluffy. Gradually add condensed milk, beating until well blended. Add 1 tablespoon lime rind, 1/2 cup lime juice, and 1/3 cup rum. Mix well. Pour mixture into pie crust.
Refrigerate 3-4 hours or overnight.
Gradually add 1 tablespoon rum to whipping cream, beating until stiff; spread over pie, and sprinkle with 1 teaspoon lime rind.
