Peel the potato and place in a pan of boiling water. Cook until soft. Drain the water and let the potato cool a little.
Mash the potato in a bowl with the powdered sugar and vanilla. Mix well, then stir in the coconut.
Spread the potato mixture in the bottom of a 9x13 baking dish.
Melt the chocolate in the top of a doubler boiler over simmering, not boiling water. Carefully remove the top of the double boiler and let the chocolate cool for 1 minute.
Spread the chocolate over the sweet mashed potatoes. Let the candy cool to room temperature.
Use a knife dipped in hot water and wiped dry to cut the mashed potato candy into squares.
Store the candy in an airtight container.
