Serves/Makes:   8 dozen

  

Ingredients:
1 cup warm (unseasoned) mashed potatoes
1/2 teaspoon salt
2 teaspoons vanilla
2 pounds confectioners' sugar (buy 1 lb. extra)
1 pound chocolate for dipping
2/3 cup ground salted peanuts
1 cup shredded coconut (optional, or use in place of peanuts)

Directions:

Combine potatoes, salt and vanilla in 4 quart mixing bowl. Sift confectioners' sugar over mixture, stirring and adding 1 cup at a time. Mixture will liquefy first, then gradually begin to thicken. Continue until it becomes a stiff dough. (It may not take 2 pounds of confectioners' sugar - it may take more - it depends on the water quantity in the potatoes.) Knead, cover with damp cloth. Chill until a small spoonful can be rolled into a ball. Dip 1/2 inch balls in melted chocolate - then roll in nuts or coconut or both!
