Irish Potato Candy Recipe

Serves/Makes: 16 slices
Ingredients:
1 small potato (about the size of an egg)
1 box powdered sugar
3/4 cup crunchy peanut butter
2 tablespoons margarine
Directions:
Peel and cook potato in salted water until tender. Drain, mash potato and margarine. Add sugar a little at a time until used up. Mixture should be very stiff. Sprinkle pow- dered sugar on cloth and roll out mixture like pie crust. Spread with peanut butter. Roll up like jelly roll and slice. Very good.
