4 cups powdered sugar 1/4 cup unsalted butter 3 tablespoons boiling water (may need a little more) 1/4 teaspoon peppermint oil (DO NOT USE EXTRACT: the oil can be found in candy supply stores) food coloring, if desired 3 tablespoons granulated sugar
Combine all ingredients EXCEPT the peppermint oil. Using hands, cream well until consistency of pie dough. If too sticky, work in a little extra powdered sugar. Add the peppermint oil- mix in well. Chill about 15 minutes.
Roll into small balls, sprinkle candy molds (if using) with granulated sugar. Roll the mint balls in extra granulated sugar. If using a candy mold, press the dough into the molds, sprinkle with granulated sugar then release from the molds onto wax paper. They can be left in balls or flatten into disks. Allow the candy to sit out uncovered about 8 hours to harden. These can be tightly wrapped and frozen.
These can also be dipped in a mixture of melted chocolate and paraffin wax. Different colors makes a pretty addition to a holiday cookie tray.
