2 1/2 cups flour
1 cup quick-cooking oats
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground cloves
2 teaspoons grated lemon zest
1 cup dark brown sugar, packed
3/4 cup salted butter, softened
1 large egg
1/2 cup unsweetened applesauce
1/2 cup honey
1 medium apple, peeled, finely chopped
1 cup raisins
1/2 cup quick-cooking oats

directions

Preheat oven to 300 degrees F.

In a bowl combine the flour, oats, salt, soda, cinnamon, cloves, and lemon zest. Mix with a wire whisk and set aside.

Cream the sugar and butter together in a large bowl using an electric mixer. Add the egg, applesauce, and honey, and beat on medium speed until smooth. Add the flour mixture, apple, and raisins and beat on low speed till mixed.

Do not overmix. The dough will be quite soft.

Drop by rounded tablespoons onto ungreased baking sheets, 1-1/2 inches apart. Sprinkle the cookies with the remaining 1/2 cup oats.

Bake 23-25 minutes or until bottoms are golden. Cool on wire racks.

This recipe tastes more like an Apple Spice Cake than a Oatmeal Cookie (note you use almost twice as much flour as Oatmeal). It may be healthier -- but it's not an Oatmeal Cookie!

Wow! My husband's favorite cookie is oatmeal raisin- his favorite cake is apple cake. :) These cookies are wonderful and much healthier than cookies with oil and lots of sugar!
