Cheddar Cheese Potato Soup Recipe

Serves/Makes: 8
Ingredients:
1/3 cup onion
1/3 cup celery soup
2 tablespoons butter/margine
4 cups peeled and diced potatoes
3 cups chicken broth
2 cups shredded cheddar cheese
2 cups can evaporated milk
1/4 teaspoon pepper
1 dash paprika
Seasoned croutons and fresh parsley
Directions:
In a large sauce pan,saute onion and celery in butter/margine until tender. Add potatoes and broth and bring to a boil. Reduce heat; cover simmer for 10 to 15 minutes or until potatoes are tender. Puree in small batches in a blender until smooth; return to pan.
Stir in cheese, evaporated milk, pepper and paprika. Cook and stir until cheese has melted. Garnish with croutons and parsley.
