Kentucky Pecan Cake Recipe

Serves/Makes: 12
Ingredients:
2 1/2 cups self rising flour
2 tablespoons hot water
2 cups sugar
4 egg yolks
1 1/2 cup vegetable oil
1 cup applesauce
2 1/2 tablespoons ground cinnamon
1 cup pecans, chopped
4 egg whites
powdered sugar
Directions:
Place flour in large mixing bowl. Set aside.
In a separate bowl, combine next 6 ingredients in order listed; add to flour. Beat at medium speed of mixer until smooth. Stir in the pecans.
Beat egg whites (at room temperature) until stiff; fold into batter. Pour mixture into an ungreased 10-inch tube pan.
Bake at 350" for 1 hour and 30 minutes, or until cake tests done (carefully check cake after one hour of baking -- when cake appears done,remove from oven); invert pan, and cool cake completely; remove from pan.
Sprinkle top of cake with powdered sugar.
