Ingredients:
***Cake***
1/2 cup Shortening
2 cups sugar
5 whole eggs
1 teaspoon pure vanilla extract
1 cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup flaked coconut
1 stick margarine, softened
1 cup pecans, chopped
***Cream Cheese Icing***
4 ounces pkg. cream cheese
1 3/4 cup powdered sugar
1/4 cup butter or margarine
1 teaspoon pure vanilla extract

Directions:

Preheat oven to 325 degrees. Grease and flour three 9" round cake pans. Blend shortening and sugar. Add vanilla and 5 eggs (one at a time).

In a separate bowl, combine soda, flour, and salt; add to egg mixture, alternating with buttermilk. Stir in coconut and pecans. Pour into prepared pans. Bake for approx.35 to 40 minutes.

For Icing: Blend cream cheese and butter together. Add powdered sugar and vanilla. Spread on cake when cooled.
