Ingredients:
1 package yellow cake mix
1 cube unsalted butter
3/4 cup brown sugar (more or less per taste)
1 can chopped apricots in light syrup
1/2 cup chopped nuts

Directions:

Preheat the oven to 350 degrees.

Drain the apricots and reserve the juice. Add enough water to reach the amount called for on the cake mix box. In a large pan or oven proof skillet melt the butter. Let it cool some before adding the brown sugar or you will have a brittle caramel which does not cut worth a darn. Spread the chopped nuts over the brown sugar and spread the apricots over the nuts.

Follow directions on the box for mixing the cake. Pour all the batter over the apricots and bake for 1 hour at 350 degrees.

When a toothpick is inserted in the middle of the cake and comes out clean, immediately turn the cake out on a large cake plate. Allow to cool and then enjoy.

NOTE: A word of caution. Spring form pans do not work well for this recipe because the butter oozes through the bottom. A large deep T-fal skillet works just great.
