Apple Butter
INGREDIENTS:
12 apples, quartered, leave the skin on (use braeburn or granny smith or any tart firm apple)
2 cups apple juice
2 cups sugar, to taste
1 1/4 teaspoon cinnamon, more or less
2 tablespoons lemon juice more or less
DIRECTIONS:
Combine all ingredients in a large crockpot., cover and cook in high stirring from time to time for the first hour. Remove the lid and turn the heat down to low. Stir occasionally. Since the apples are not precooked, it will take 2 to 3 days to completely cook. Stir every hour or so.
COOK'S NOTES:
I turn it off at night and start again the next morning, but my friend cooks hers all night. As it cooks a thicker skin forms on the top. I stir this in, but that is not essential. For some reason, it seems to taste much better cooked in the crockpot than cooked faster at a higher heat. Sometimes, the skin is resistant to breaking down. I hit it with a hand blender.
