Wild Rice Chicken Casserole
INGREDIENTS:
1 package wild and long grain rice, prepared as directed on box
2 chicken breasts, poached
3/4 cup water from cooking chicken
1 diced green bell pepper
1 cup diced celery
1 tablespoon minced onion
2 cans sliced water chestnuts, drained
1 can cream of chicken soup
1 can cream of celery soup
3/4 cup mayonnaise
DIRECTIONS:
Dice the two chicken breasts. Mix all ingredients together including the water reserved from cooking chicken. Spray a 9 x 13 pan with cooking spray. Put mixture in pan, cover with plastic wrap and refrigerate over night. Remove plastic and bake casserole for 50 to 60 minutes at 325 degrees.
I usually use more chicken than the recipe calls for, but just use 3/4 cup cooking broth. Canned chicken broth can be used instead of the cooking water. Calorie count can be lowered by using low fat soups.
