Chicken Thighs With Garlic And Lime Recipe

Ingredients:
1 tablespoon minced garlic
1 1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons fresh lime juice
4 chicken thighs -- (6-ounce each) skinned
3 tablespoons fat-free low-sodium chicken stock
1 tablespoon white wine vinegar
2 teaspoons chopped fresh cilantro
2 lime wedges
Directions:
Preheat the oven to 350 degrees F.
In a small bowl, combine the garlic, cumin, oregano, salt, pepper, and 1 tablespoon of the lime juice. Rub the garlic mixture over the chicken and place the chicken in a medium ovenproof skillet.
In a small bowl, combine the remaining 1 tablespoon lime juice, the stock, and the vinegar and pour over the chicken. Bring to a boil over medium-high heat. Remove from the heat. Wrap the handle of the skillet with foil. Cover and bake for 30 minutes, or until a meat thermometer registers 180 degrees.
Remove the chicken from the skillet and keep warm. Place the skillet over medium-high heat and bring the liquid to a boil. Cook until reduced to 1/4 cup, about 3 minutes. Spoon the sauce over the chicken, sprinkle with the cilantro, and serve with the lime wedges.
