Mushroom Chicken Deluxe

ingredients
1 1/2 cup sliced fresh mushrooms
1 medium onion, chopped
1/2 cup chopped green bell pepper
2 tablespoons butter or margarine
1 can cream of chicken soup
1/2 cup milk
1/4 cup chopped pimientos
3/4 teaspoon dried basil
8 ounces spiral pasta, cooked and drained
2 cups small curd cottage cheese
1 1/2 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese, divided
3 cups diced cooked chicken
directions
In a skillet, saute the mushrooms, onion and green pepper in butter until tender. Add the soup, milk, pimientos and basil; mix well and heat through.
Place pasta in a greased 9 x 13 x 2" baking dish. Combine the cottage cheese, cheddar cheese and 1/4 cup Parmesan cheese; spread over pasta. Top with chicken. Pour mushroom sauce over chicken. Sprinkle with remaining Parmesan cheese.
Cover and bake at 350 degrees F for 50-55 minutes or until bubbly.

Really enjoyed how cheesy this was. Only thing I did different was to combine the pasta with the cottage cheese and cheddar first, then put it in the pan so that way it was all coated and there wouldn't be any dry parts.
