6 cups green cabbage, grated
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1/2 cup fresh coriander, chopped
1 clove garlic, mashed
1 jalapeno pepper, chopped
1 onion, chopped
1 cup olive oil or corn oil
1/2 cup red wine vinegar
1 teaspoon sugar
salt and pepper, to taste
directions
Grate cabbage. Chop bell peppers and coriander. Mix together.
Make dressing by combining the remaining ingredients. Toss with cabbage mixture and allow to stand for one hour before serving.
