4 small avocados, peeled and seeded 3 tablespoons lime juice 1 container (8 ounce size) light sour cream 1 clove garlic, pressed 1/2 teaspoon cumin 1/2 teaspoon salt 1/4 teaspoon ground red pepper 1 1/2 package (16 ounce size) coleslaw mix 1 small sweet onion, chopped 1 small red or green bell pepper, chopped
directions
Mash 3 avocados with 2 tablespoons lime juice in a large bowl. Chop remaining avocado, and toss with remaining 1 tablespoon lime juice.
Stir sour cream and next 4 ingredients into mashed avocado mixture until well blended. Stir in coleslaw mix; add chopped avocado mixture, onion, and bell pepper, and toss gently.

This was really good! I think I would add jicama, apple or some corn next time. I feel like it could use something sweet.
