Mocha Tier Cake Recipe

Ingredients:
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup shortening
2 cups sugar
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
4 eggs, separated
3 1/2 squares chocolate, melted
1 cup strong coffee
Directions:
Sift and measure the flour, baking powder and salt. Mix together. Cream the shortening until very fluffy; add the sugar and extracts. Beat in the egg yolks, then the melted chocolate. Add the flour mixture alternately with the coffee, beating until smooth after each addition. Thoroughly fold in the stiffly beaten egg whites. Turn into 3 oiled layer pans and bake at 400 degrees for 20-25 minutes.
FROSTING 1 stick butter or margarine; 1 lb. powdered sugar; 1 tsp. vanilla extract; dash of salt; 3 tbsp. cocoa; and 3 tbsp. strong coffee blended together.
Place the first cake layer upside down on the serving plate. Spread with about ½ cup of the frosting. Place the second layer on top and spread with another ½ cup of frosting. Place the third layer on top and use the rest of the frosting to cover the top and sides.
