Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
2 2/3 cups whole wheat flour
1 1/2 cup all-purpose flour
2 cups sugar
2 tablespoons baking powder
1 teaspoon salt
2 cups quick-cooking rolled oats
1 cup vegetable oil
6 eggs, lightly beaten
4 bananas
2 cups blueberries or cranberries
OR
6 ounces miniature chocolate chips
directions
In a large bowl, combine flours, sugar, baking powder, salt, and oats.
In another bowl, combine oil, eggs, and mashed bananas (Better yet, place these ingredients, including banana chunks, in the blender!). Add to dry ingredients. Stir in berries and spoon into loaf pans (9" x 5" x 3").
Bake at 350 degrees F for 40-50 minutes or until toothpick comes out clean. Cool for 10 minutes in pan and remove to rack to cool completely.
NOTE: For easier slicing, wrap in foil after cooling and refrigerate for several hours.

Loved the concept. I followed the recipe, except added one cup blueberries and 6 oz chocolate chips. It's yummy but crumbly. A little dry. Does anyone have any suggestions, on what to do next time?

Used chocolate chips and craisins. I definitely needed another 10 minutes and it browned really well.

Great recipe!!! My favorite breakfast muffins. I use whole wheat flour and add in more blueberries just for that extra bit of healthiness. LOVE THESE!!!
