Serves/Makes:   1 loaf

  

Ingredients:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 eggs
1 orange, zest and juice from
OR
1/2 cup of regular orange juice and no zest
4 bananas (use very ripe bananas) coarsely mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
1 teaspoon banana extract
1 cup chopped pecan or walnuts or a combination (save a little for the bottom of the baking pan)

Directions:

Preheat the oven to 350 F. Grease and flour a 9x5 loaf pan, sprinkle some chopped nuts in the bottom of the pan (this helps the bread come out easier). In a large bowl with an electric mixer, cream butter and sugar. Add eggs and beat until fluffy. Add the zest, orange juice and bananas- beat to combine. Add banana extract. Mix in the dry ingredients and stir by hand just to combine.

Pour into prepared pan and bake about 1 hour or until a pick inserted into the center of the bread comes out clean. Let cool in the pan for 10 minutes then turn out onto a rack to finish cooling.
