Sunflower Bars Recipe

Serves/Makes: 2 dozen
Ingredients:
3/4 cup cashew nuts, shelled
1 teaspoon vegetable or sesame oil
4 cups sunflower seeds
1/3 cup apple juice concentrate or maple syrup
1 cup shredded coconut
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Directions:
Preheat the oven to 350°F. Oil an 11 x 7-inch baking pan. Process the cashew nuts and oil in a food processor or blender until smooth. (If you don't have a food processor or blender, grind the nuts with a pestle and mortar.) Stir together the cashew nut mixture, sunflower seeds, apple juice, coconut, vanilla, and salt in a large bowl until well blended.
Press the mixture into the prepared pan, smoothing the top. Bake for 25-30 minutes, or until golden brown. Cool completely before cutting into bars.
