Ready in: 30-60 minutes
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 2.5 dozen
Ingredients:
1 1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup butter, at room temperature
1 cup firmly packed brown sugar
1 egg
1/2 cup strong coffee
1 1/2 cup chopped walnuts
1/2 cup semisweet chocolate chips
3 ounces white confectioner's coating, if desired
Directions:
Preheat oven to 350F degrees. Generously grease a 13x9 baking pan. Sift flour, baking powder, baking soda, salt and cinnamon into a small bowl. In a large bowl, cream butter, brown sugar, and egg until very light and fluffy.
Add dry ingredients alternately with coffee, stirring to mix well. Stir in 1 cup chopped walnuts. Spread batter in greased pan. Sprinkle with remaining 1/2 cup of walnuts and chocolate pieces.
Bake in preheated oven 20 to 25 minutes or until top springs back when lightly touched. Cool to barely warm in pan on a wire rack. Cut in 30 diamond shapes.
If desired, melt confectioner's coating in top of a double boiler set over hot, not boiling, water. Spoon into a pastry bag fitted with a round tip. Pipe designs over each bar. Carefully remove bars from pan.
