It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Quick and Easy Granola Bars

ingredients
3 cups uncooked rolled oats
1 can (14 ounce size) sweetened condensed milk
1 teaspoon cinnamon
1/2 teaspoon salt (don't use salt if your trail mix is salted)
2 cups trail mix*
2 tablespoons oil or melted butter
directions
* or any mixture of nuts, seeds, dried fruit, chocolate chips, etc. The mixture can be chopped by hand or in a food processor until coarse, but not quite so large.
Preheat oven to 350 degrees F.
Mix ingredients in a large bowl. When ingredients are thoroughly mixed, spread on an 11 x 17 inch Silpat in a jellyroll-type cookie sheet pan and bake until browned on the edges, about 20-25 minutes.
When done carefully ease the Silpat out of the pan and onto a wire rack. Then peel/slide the Silpat out from under the granola bars and allow to cool. Once cool, cut into pieces, or just break into chunks, which is much easier.
