Baked Oatmeal Squares

1/3 cup vegetable oil or applesauce
1/2 cup sugar
1 large egg or equivalent egg substitute
2 cups oatmeal
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cup milk or skim milk
fruit, if desired
Stir together the oil or applesuce, sugar and egg.
In a separate bowl combine the oats, salt and baking powder. Add the milk and combine both ingredients gently fold until thoroughly mixed.
Add your choice of fruit if desired and pour into a greased square 8" dish.
Bake in a 350 degree oven for 25-30 minutes. Cut into squares for serving.
