1 cup yogurt
1 teaspoon baking soda
1/2 cup vegetable oil
3/4 cup brown sugar
1 egg
1 cup natural bran
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup berries or raisins
directions
Combine yogurt and soda in large bowl. Mix oil, sugar, eggs, and bran in second bowl. Add yogurt to bran mixture. Add flour, baking powder, and salt. Fold in fruit. Bake in lightly greased muffin tins at 350 degrees F for 20-25 minutes or until done.
