Ingredients:
1/2 cup black-eyed peas (soaked overnight)
salt
4 whole nutmeg (optional but a nice touch)
4 cloves (optional but a nice touch)
6 slices bacon, cut into 1S pieces
4 shallots, chopped
2 cloves garlic, chopped
1/2 red pepper, diced
1/2 cup white rice (I use Basmati)
1 1/4 cup chicken broth
2 teaspoons dried oregano
1/4 teaspoon ground nutmeg
1/2 teaspoon red pepper flakes
1 bunch fresh spinach, washed & chopped

Directions:

Bring a pot of water to boil with salt, nutmeg & cloves. Add beans, cover and simmer 45 mins. Rinse and soak rice for 30 mins. In a heavy pot saute bacon until fat is rendered. Remove and drain bacon. In pot saute shallots, garlic and red pepper 5 mins. Add rice and continue sauteing 1 more min. Add broth, oregano, nutmeg & red pepper flakes. Cover & simmer as per rice instructions. Just before rice is done add cooked black-eyed peas, reserved bacon and spinach. Cover pot and let spinach wilt.
