Brigitte Sealing's Noodles Florentine Recipe

Serves/Makes: 6
Ingredients:
8 ounces Medium noodles, cooked and drained
2 cups Cottage cheese
1/2 cup Grated Parmesan cheese
1 teaspoon Salt
1/4 teaspoon Crushed basil
1/4 cup Bread crumbs
1 package (10 oz size) frozen, drained, chopped, and thawed spinach
1/2 cup Sour cream
1/4 teaspoon Tabasco
1 tablespoon Melted butter
1/4 teaspoon Thyme, crushed
Directions:
In a large bowl, mix spinach, cottage cheese, Parmesan cheese, sour cream, salt, Tabasco, basil and thyme. Stir in noodles. Turn into a 1 1/2 quart casserole dish. In a small bowl, combine butter and bread crumbs. Sprinkle over the casserole. Cover and bake at 350 F for 45 minutes.
