Sweet Fiery Lentils

ingredients
2 tablespoons olive oil
1 red onion, sliced
1 yellow onion, sliced
2 cloves garlic, minced
1 tablespoon cinnamon
1 tablespoon ground ginger
1/4 teaspoon cayenne pepper, or to taste
1/4 teaspoon red pepper flakes, or to taste
2 bay leaves
2 cups green lentils
3 1/2 cups chicken stock
2 tablespoons lemon juice
1 tablespoon grated fresh lemon peel
directions
Heat oil in the pressure cooker over medium heat and saute onions and garlic until softened. Add remaining ingredients, except lemon juice and zest.
Bring mixture to a boil. Seal cooker, bring up to high pressure, reduce heat to stabilize pressure and cook for 10 minutes.
Remove cooker from heat and release pressure using cold water release method. Stir in lemon juice and peel and remove bay leaves. Taste and adjust seasonings.
