2 tablespoons olive oil
1 small onion, minced
6 eggs, beaten
1/2 teaspoon dried oregano
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup Parmesan cheese
Heat oven to 350 degrees F. Grease a glass 1 1/2 quart size baking dish.
Heat the olive oil in a skillet over medium heat. Add the minced onion and cook, stirring, until the onion is soft and light golden brown.
Add the beaten eggs, oregano, nutmeg, salt, and black pepper to the pan. Mix well and stir over the heat for 1 minute.
Remove from the heat and stir on the Parmesan.
Pour the egg mixture into the prepared baking dish. Place in the oven and bake for about 30 minutes at 350 degrees F until the eggs are set and the top is golden brown.
Serve immediately.
