3/4 pound boneless skinless turkey thighs, cut into bite-sized pieces 2 medium green apples, cored and diced 2 pounds yams, peeled and cut into 1" chunks 1/4 cup diced onion 1 cup chicken broth or bouillon 1/2 cup apple juice 2 tablespoons quick-cooking tapioca 1 tablespoon maple-flavored syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon poultry seasoning 1/4 teaspoon salt 1/4 teaspoon ground white pepper 1/2 cup light sour cream or plain nonfat yogurt
Combine all ingredients, except sour cream or yogurt, in crockpot. Cover and cook on Low 6-7 hours or until yams are tender.
Serve in bowls with a dollop of light sour cream or plain nonfat yogurt.
