ingredients
2 teaspoons salad oil
2 cups cooked pinto beans
1/8 teaspoon garlic salt
salt, to taste
1 cup cooked, drained chorizo
1/3 cup chopped onion
1/4 cup dried, crushed cilantro
Cheddar cheese to garnish
directions
In a skillet heat oil, add cooked beans and mash with a potato masher. Cook beans for 2 minutes, then sprinkle with garlic salt and salt. Add cooked and well-drained chorizo. Blend well. Add onion and cilantro.
Cover, let simmer over low heat for 10 to 15 minutes. Stir frequently. Garnish with cheese or salsa.
