A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

- #86012
ingredients
1 egg
1 cup seasoned bread crumbs
1/4 cup chopped onion
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 1/2 pound lean ground beef
1 cup pepper Jack cheese, divided
directions
In a large bowl, combine the egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture and mix well.
Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8-in. x 4-in. x 2-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese.
Bake, uncovered, at 350 degrees F for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees F.
Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing.

This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.
Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

This stuffed meat loaf recipe was easy to make and satisfying. Pepper Jack cheese is still pretty mild, so next time I'll think about adding some minced, pickled jalapeno slices for a little extra kick.
