Potato-Frosted Meat Loaf

ingredients
2 pounds ground beef or a mixture of ground beef, veal and pork
1/2 cup beef broth (canned or prepared with a cube)
1/3 cup ketchup
2 eggs
1 cup packaged Italian seasoned breadcrumbs
1/2 cup minced celery
1/2 cup finely chopped onion
3 teaspoons dried parsley
1 1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups hot, seasoned mashed potatoes
1/3 cup grated Parmesan cheese
2 tablespoons butter, melted
directions
Combine meat, broth, ketchup, eggs, breadcrumbs, celery, onion, parsley, salt and pepper in a large bowl; mix well. Press mixture into a lightly greased loaf pan.
Bake in a 350 degrees F oven, for 1 hour or until loaf shrinks from sides of pan. Remove from oven; pour off drippings. Unmold loaf into cookie sheet.
Combine mashed potatoes with cheese in a bowl; frost meat loaf with mixture. Brush potatoes with melted butter.
Bake in a hot oven (400 degrees F) for 20 minutes, or until potato topping is golden.
