Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1-2 hrs
ingredients
1 pound 93% lean ground beef
1 medium onion, grated
1 clove garlic, minced
3 slices white bread
1/4 cup skim milk
3 tablespoons romano cheese
1 1/2 teaspoon prepared yellow mustard
1 tablespoon soy sauce
1 tablespoon fresh Italian parsley, chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1 egg
freshly ground black pepper
directions
Tear the white bread into small pieces and place in a bowl. Add the milk. Let the bread soak up the milk. Set aside.
In a large bowl add the ground beef, onion, garlic, parsley, thyme, black pepper, sage, mustard, soy sauce, cheese, bread and egg. Mix thoroughly with your hands. If the meat is too moist, add some bread crumbs.
Shape the meat into a loaf. Place the meatloaf in a baking dish and bake at 375 degrees F for 40 to 45 minutes.
