Hard boiled eggs pressed right into the meatloaf make some unique looking slices. Just the right mix of ingredients makes the rest of the loaf plenty tasty as well.
In a large bowl, mix together the bread crumbs, beef, pork, egg, parsley, onion, garlic, celery, thyme, pepper, and salt.
If adding the hard-boiled egg, pat the meatloaf mixture out into an 8x8 square on waxed paper. Place the whole hard-boiled eggs on one half and fold the remaining half over, sealing the sides. Place in a loaf pan.
If not adding the eggs, simply form the meatloaf into a loaf and place in the pan.
Place the pan in the oven and bake at 350 degrees F for 1 1/2 hours or until cooked through.
Can serve the finished meatloaf with gravy or coat the top of the meatloaf with ketchup or tomato sauce before baking.

My wife went to pick up her mother and I was assigned to make meatloaf for dinner. I thought this similar recipe would be enjoyed by all and I baked the meatloaf. The women didn't like the idea but I thought it was great. It was too much of a paradigm shift.

I didn't add the hardboiled eggs because I wasn't sure how they were supposed to be added to the recipe. Are they supposed to be cut up and put in the meatloaf mixture? I was worried that the bread crumbs would be too much too as two cups seems like a lot. It made a firm meatloaf so that was ok. It was tasty.

No, as it says in the directions you place the whole hard-boiled eggs on the meatloaf mixture and then fold up the sides to enclose the egg.
