Crusty Meat Loaf Wedges

ingredients
1 1/2 pound lean ground beef
1 egg yolk, slightly beaten
1/3 cup milk
1/2 cup old fashioned oats, uncooked
1 1/2 teaspoon salt
1/4 teaspoon black pepper
directions
Mix beef, egg yolk, milk, oats and seasonings. Combine lightly but thoroughly.
Shape meat mixture and place in a 12x12" microwave baking dish. Cut meat mixture in half, pushing halves apart with a metal spatula. Cut each half into three wedges; push each apart slightly.
Cook, uncovered, at full power about 12 minutes. Rotate dish a quarter turn after 6 minutes and continue cooking. Cover loosely with clear plastic wrap and let stand 2 minute to complete cooking.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Our meatloaf didn't exactly get crusty -- in fact it was wonderfully moist! Depending on the wattage and age of your microwave you will want to watch the cooking time so it doesn't overcook. If you wish to make this in the oven instead simply bake at 325 for 35-40 minutes or until cooked through. The seasonings seemed a little light to us so we added half an envelope of taco seasoning (leftover from another recipe we tested). Turned out great!
