ingredients
3 pounds lean ground beef
2 eggs
2 large ripe bananas, mashed
1 small onion, finely grated
2 teaspoons salt, or to taste
1/2 teaspoon black pepper
1 cup fresh soft white bread crumbs (optional)
directions
Combine all ingredients and pack into a large loaf pan or a 9 inch square pan. Bake at 350 degrees F for about 1 hour. Pour off any liquid that accumulates in the pan.
Serve as you would any meatloaf, hot or cold. When cold, the meat slices well and the bananas keep the meat moist plus add a nice subtle flavor.
