Tamale Casserole II Recipe

Ingredients:
1 tablespoon butter
1 pound ground beef
1 onion -- chopped
30 ounces chili without beans
15 ounces red kidney beans -- rinsed and drained
1 teaspoon chili powder
1 package corn muffin mix
1 egg
1/2 cup milk
Directions:
Preheat oven to 400F degrees. Grease a 2-quart casserole dish with nonstick cooking spray. In a large skillet, melt butter over medium-high heat. Add ground beef and onion and cook until beef is no longer pink; drain. Add chili, kidney beans, and chili powder to the skillet.
Stir well. Spoon mixture into prepared casserole dish. Combine the corn muffin mix, egg, and milk in a bowl until mix is moistened. Pour muffin mixture over the top of the ground beef. Bake for 25 minutes or until muffin topping is done.
