1/4 cup chopped onion 1/4 cup chopped green bell pepper 1/2 cup uncooked rice 1 1/4 pound ground beef 1/2 teaspoon salt (or more, to taste) 1/4 teaspoon black pepper 1 can (14.5 ounce size) diced tomatoes 1 can (10 ounce size) diced tomatoes with green chilies
Brown the onions, green pepper and ground beef. If necessary, spoon off excess fat.
Add the uncooked rice, salt, pepper and tomatoes, and mix thoroughly. Let the mixture come to a boil.
Place mixture in a greased 3-quart casserole dish. Cover and bake about 1 hour at 350 degrees F.
