1 pound ground beef
2 medium potatoes, sliced thinly
1 medium onion, sliced thinly
1 cup white rice, uncooked
2 large cans diced tomatoes
salt and pepper, to taste
Spray Crock-Pot with non-stick spray; place layer of potatoes, salt and pepper, to taste. Add layer of rice, then crumble ground chuck on top.
Finish layers with sliced onions. Finally pour diced tomatoes on top.
Cover and slow cook for 3-4 hours.
