Frito Pie Recipe

Serves/Makes: 4
Ingredients:
1 pound lean ground beef
1 tablespoon oil
1/2 teaspoon garlic powder
8 ounces tomato sauce
1/3 can water
1 bouillon cube
1 pound can kidney beans or chili beans with liquid
1/4 teaspoon oregano
1 tablespoon chili powder
Salt and pepper to taste
6 ounces corn chips
Lettuce, shredded
Chopped onion, either regular cooking onion or green
Grated cheese
Directions:
In large skillet heat oil. Add meat, onion and garlic powder and cook until meat is brown, stirring occasionally. Add tomato sauce. Rinse out can with the water and add to skillet along with the bouillon, beans, oregano, chili powder and salt and pepper to taste.
Preheat oven to 350-degrees.
In a 2-quart casserole dish, alternate layers of beef mixture and corn chips, ending with corn chips. Cover and bake in a 350-degree oven for 30 minutes. Uncover and bake for 10 minutes.
Top with shredded lettuce, chopped onions, and grated cheese.
