3 pounds potatoes 1/2 cup hot chicken broth 5 tablespoons oil 3 tablespoons vinegar 1 small chopped onion 1 tablespoon parsley salt and pepper
Cook three pounds of potatoes. When cool, peel skin and slice. Pour 1/2 cup hot chicken broth over them. Make a marinade with three to five tablespoons of oil, three tablespoons of vinegar, one small chopped onion, one tablespoon of parsley and salt and pepper to taste. Add marinade to potatoes and broth. Let sit one to two hours in your crockpot before serving. Serve warm.

This recipe is just perfect. I've had this dish several times in German homes but never been able to find a recipe online for this 'real deal' potato salad. You always come across those really gross hot ones that are sweet with bacon :::shudder::: but this is fabulous. It is the perfect accompaniment to quality grilled meats. Be sure to season it adequately. I add chives.

This potato salad is okay. However authentic German Potato salad has chives and bacon in it. Where this recipe did not. Which made it bland.
