An easy skillet meal made with chicken, tomatoes, rice, zucchini, basil, and Parmesan cheese.

non-stick cooking spray
1 pound chicken breasts, boneless & skinless
1 can (28 ounce size) diced tomatoes with basil, garlic and oregano
1/2 cup water
1/2 teaspoon salt
1 1/2 cup long-grain rice, uncooked
2 zucchini, quartered lengthwise and thinly sliced
2 teaspoons dried basil
1/2 cup Parmesan cheese
salt and ground black pepper, to taste
Spray a 12-inch nonstick skillet or Dutch oven with cooking spray.
Cut chicken breasts into 1/2-inch chunks. Add to skillet and cook over medium-high heat 3 to 5 minutes or until lightly browned.
Add tomatoes, water, salt and rice; mix well. Bring to a boil. Reduce heat, cover tightly, and simmer 10 minutes. Stir in zucchini and basil. Cover; cook 15 minutes or until rice is tender.
Remove from heat. Blend in cheese. Season with salt and pepper to taste.

Easy like you said, very tasty. Thought your portion size was big, I made half a recipe (2 of us) and had enough leftover for another meal, which is good because we loved it.
