Greek Fish Soup

ingredients
4 tablespoons extra-virgin olive oil
2 medium onions, coarsely chopped
4 cloves garlic, finely chopped
2 tablespoons finely chopped fresh parsley
2 pounds potatoes, scrubbed and cubed
1 can tomatoes (14 ounce size), chopped, with juice
2 pounds fish fillets (halibut, cod, grouper fillets, flathead, snapper, or dory)
water
salt and freshly ground white pepper
directions
Heat 3 tablespoons of the oil in a large soup pot. Add the onions, 3 cloves of the garlic, and the parsley and saute until lightly browned, 7-8 minutes.
Add the potatoes and saute for 5 minutes. Add the tomatoes and bring to a boil.
Add the fish and enough water to cover. Partially cover the pan and cook for 20-30 minutes, until the fish is very tender.
Season with salt and white pepper. Stir in the remaining 1 tablespoon of oil and 1 clove garlic and let stand for 5 minutes before serving.
