Crustless Bacon And Cheese Quiche

ingredients
1 cup green onions, sliced
1 cup tomatoes, chopped
12 slices bacon
1 cup mushrooms, sliced
12 eggs
1/3 cup sour cream
1 cup Cheddar cheese, shredded
1 cup Mozzarella cheese, shredded
directions
Reserve 2 T. onions and tomatoes.
Cook bacon in large skillet. Reserve 1 T. drippings and saute mushrooms 2 minutes. Chop bacon and add to mushrooms along with tomatoes and onion.
Beat eggs and sour cream with whisk and pour into greased 9 x 13 baking dish. Top with bacon mix and cheeses. Bake at 325 degrees F for 30 minutes or until set. Sprinkle with reserved onion and tomatoes. Let stand 5 minutes.

I subbed vegetarian sausage for bacon, the result was quite tasty. Savory and hearty,the tomatoes and green onions give it some snap, and it's not overly cheesy, which is nice. More like a fritatta than a quiche.
