Easy Spinach Quiche

ingredients
1 package (10 ounce size) chopped frozen spinach, thawed
1/2 onion
1/2 cup bell pepper
1 cup cheese
1 cup milk
3/4 cup Bisquick baking mix
3 eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
directions
Spray pie plate with vegetable oil spray. Put first 4 ingredients in bottom of pie plate. Mix rest with mixer to pour over other ingredients. Bake at 400 degrees F for 35 minutes.

This is fantastic! I made it tonight and even my carnivorous husband loved it. My 2 year old ate a few bites as well. This is a simple, family friendly recipe that doesn't take long to prepare. My husband said it's a keeper!
