Easy Lentil Soup Recipe

Serves/Makes: 6
Ingredients:
2 Italian sausage links
1 large onion, peeled and diced
16 ounces lentils
8 cups chicken broth
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon red pepper flakes
2 carrots, peeled and diced
1/2 cup quick-cooking barley
1 cup finely grated Swiss or Cheddar cheese
Directions:
Break open the sausage and crumble it into a large pot set over high heat. Chop the onion and add it to the sausage, stirring. Add lentils, broth, thyme, salt, red pepper and carrots. Add 4 cups water. Bring to a boil, reduce heat and cook, uncovered, about 30 minutes. Add barley and cook 10 minutes more, or until barley and lentils are soft. Top servings with grated cheese.
