Pepper Kakar (Swedish Cardamom Cookies) Recipe

Serves/Makes: 60
Ingredients:
1 cup sugar
1/2 cup molasses
1/2 cup light Karo syrup
1 cup butter
3 tablespoons sweet cream
1 teaspoon baking soda mixed in a little hot water
1/2 teaspoon crushed cardamom seeds
1 egg
5 1/2 cups flour (or enough to roll)
Directions:
Boil the sugar, molasses and Karo syrup. Pour over butter; stir until cool. Add sweet cream, baking soda, cardamom seeds, egg and flour. Refrigerate overnight.
Heat oven to 350. The key to success is to roll the dough very thin. Bake for about 9 minutes. Keep a watch as they cook quickly!
