Mulligatawny Soup Recipe

Serves/Makes: 8
Ingredients:
1 cup boiling water
1 cup shredded coconut
1 onion -- finely chopped
1 carrot -- grated
3 tablespoons butter
1 tablespoon curry powder
1 broiler/fryer chicken -- cut in pieces
4 cups chicken stock
2 bay leaves
cilantro -- chopped
hot cooked rice
Directions:
Combine boiling water and shredded coconut. Let stand while preparing remaining ingredients.
Saute the onion and carrot in the butter until softened. Stir in the curry powder. Add the chicken and saute until browned, stirring frequently.
Drain the coconut, discard the coconut. Add the liquid to the crockpot. Add remaining ingredients except rice. Cover; cook on high for 3 hours. Serve over rice.
