Ingredients:
2 cups lettuce
1/4 pound boned chicken
1 quart water
1/2 teaspoon sugar
1/2 teaspoon salt or to taste
1 teaspoon monosodium glutamate
1 beaten egg white
2 tablespoons minced Smithfield ham

Directions:

Slice lettuce into strips 1/8-inch x 1-inch. Mince chicken very finely, first with the sharp end of the knife, then with the back of the knife so that it becomes very finely minced. Put into 1/2 cup water and stir well with fork. Remove the tendons. Drain. Bring water to a boil and add sugar, salt, monosodium glutamate and lettuce. When the water beings to boil again, remove from stove and add chicken and egg white. Stir. Garnish with Smithfield ham.
